Watercress Bouillon

WatercressType: Soup / Bouillon

Serves 6 persons.

Ingredients:
3 tbspns oil
1 medium onion thinly sliced
2 tspns crushed garlic
1 tspn crushed ginger
1 diced tomato
5 cups water
2 bunches watercress, cleaned & washed

Preparation:

1. Heat oil in casserole, add onions, cook on low fire for 2 minutes.
2. Add garlic & ginger, cook for an additional minute.
3. Add tomato and watercress, stir for 2 minutes on medium heat.
4. Add 5 cups water and cook for 25 minutes on medium heat.
5. Add salt to taste.
